Nasi Kuning
Nasi Kuning ini saya buat waktu Ethan ulang tahun tuk pertamakalinya....Gampang banged buatnya, semuanya saya masukkin ke rice cooker, ga mau susah...
Bahan:
- 600gr beras pulen, cuci bersih (saya pake 700gr)
- 400gr beras ketan, rendam 2jam (saya pake 300gr)
- 1ltr santan cair
- 2sdm kunyit bubuk (saya pake 1sdm aja)
- 1sdm garam
- 3lbr daun pandan, dikoyak
- 3lbr daun salam
- 5lbr daun jeruk, robek-robek
- 2btg serai, ambil putihnya, memarkan
- 2 buah jeruk nipis, ambil airnya
Cara Membuat:
Resep Asli:
- Campur kedua jenis beras, kukus 1/2 matang. Sisihkan.
- Campur sisa bahan dalam panci lalu didihkan.
- Tuang nasi kukus ke dalam panci berisi campuran. Aduk rata sampai santan terserap habis.
- Pindahkan nasi ke atas kukusan, lalu kukus nasi sampai matang.
Untuk 10 orang
Nah kalo versi saya mah, cepat, simple, dan ga mau susah hehehe
Semua bahan saya masukkan kedalam rice cooker, aduk rata dan masak nasi kuning tersebut seperti buat nasi putih biasa. Jadi deh....

Ikan Tongkol Suwir Pedas
Waktu saya masih bekerja dulu di Jeddah, temen saya Emilia namanya, suka bawa ikan cakalang dan ikan roa. Maklum deh, Emilia ini totok orang Menado asli. So kita2 yang tinggal bareng se-apartemen, suka kecipratan juga ma makanannya hehehe...Enak2 banged deh, mamahnya yang buat.
So ikan tongkol suwir ini, pengganti ikan cakalang juga kangen saya ma temen saya itu juga plus makanannya....
Bahan:
- 1kg ikan tongkol tanpa tulang
- 1,5 ons cabe rawit hijau (bisa ditambah atau dikurangi ngikutin selera, menurut saya cabe segini bisa bikin perut panas)
- 1 jeruk lemon
- 6 siung bawang putih
- 3 siung bawang merah ( saya pake 1/4 nya bawang merah besar)
- garam secukupnya
- merica secukupnya
- penyedap rasa secukupnya
- minyak secukupnya
Cara membuat:
- Cuci bersih ikan lalu lumuri dengan air jeruk lemon. Diamkan beberapa saat untuk menghilangkan bau amisnya.
- Tiriskan, cuci bersih kembali lalu goreng hingga 1/2 matang. Suwir-suwir.
- Ulek bawang merah, bawang putih dengan garam sampai halus, masukkan cabe rawit lalu ulek kasar.
- Tumis bumbu yang udah diulek sampai bumbunya matang.
- Masukan suwiran ikannya lalu tambahkan garam, merica dan penyedap rasa, aduk hingga bumbu tercampur rata. Hidangkan dengan nasi panas.

Telor Pindang
Bahan:
- 10 telor, rebus, kerat permukaannya
- 1 ltr air
- 4cm lengkuas, memarkan
- 3lbr daun salam
- 1sdm garam
- 3sdt gula putih
- 3 buah teh celup
Cara membuat:
- Campurkan air, lengkuas, salam, garam dan gula putih dalam panci ukuran sedang.
- Tambahkan telor lalu rebus sampai matang kurang lebih 15-20 menit.
- Angkat telor, kemudian ketuk2 kulitnya smapai retak. Kemudian masukkan kembali ke dalam panci.
- Masak kembali, kali ini tambahkan teh celup, masak sampai air berkurang dan telor menjadi kecoklatan.
Untuk 10 buah
Sambal Goreng Daging Petai
Hadooh ini sambal buat saya nambah makannya, padahal cuman makan ma ini sambal plus nasi panas yang baru aza selesai dimasak dari rice cooker....
Bahan:
- 250gr daging sapi, potong dadu
- 250gr kentang, potong dadu, goreng
- 50gr petai, belah tiap biji jadi 2
- 2cm lengkuas, memarkan
- 2 lbr daun jeruk
- 2 lbr daun salam
- 1 batang serai
- 1 sdt garam
- 200ml santan
- 3sdm minyak goreng
- 6 buah cabai merah, iris tipis (saya skipped)
Bumbu halus:
- 10 buah cabai merah
- 15 buah cabai rawit merah
- 2 siung bawang putih
- 8 butir bawang merah (saya pake 1/2 med bawang merah besar)
- 3 butir kemiri, sangrai
- 1 sdt ketumbar
Cara membuat:
- Panaskan minyak goreng, tumis bumbu halus hingga harum. Tambahkan daun salam, serai, daun jeruk dan lengkuas. Aduk rata.
- Masukkan daging sapi, aduk dan masak sampai daging berubah warna.
- Tuang santan, masak diatas api kecil hingga mendidih.
- Masukkan kentang, petai dan cabai iris, aduk rata. Masak hingga bumbu meresap. Angkat. Sajikan
Untuk 12 porsi
Brownies Cookies
Ini jadi Favorit daddy E sekarang, satu toples bisa abis buat dia sendiri, dan saya cuman kebagian remahnya doang.....Emang doyan banget ma kukis yang satu ini. Walaupun pada akhirnya suka nyalahin saya, loh ko!!!
Begini neh bilangnya..."Kenapa seh buat kukis ini, kamu buat saya ngabisin semua, juga bikin saya ndut" gitu katanya...
Terus saya jawab..."Saya buat kukis ini, karena saya pengen buat, dan saya ga minta kamu tuh buat habisin in one or two days" and dia cuman bisa senyum senyum doang...halahhhh
Bahan:
- 4 butir telur
- 225gr gula kastor ( saya pake gula putih biasa)
- 25gr coklat bubuk
- 200gr tepung protein tinggi (saya pake plain flour)...ayak bersama dengan coklat bubuk
- 125gr mentega
- 125gr dark cooking chocolate (DCC)
- 1 sdt vanila....lelehkan bersama ketiga bahan tersebut
- kacang almond iris buat taburan
Cara membuat:
- Siapkan 2 buah loyang 30x30cm tinggi 2cm (saya ga punya, saya pake 1 buah loyang yang panjang total with edge 38x27cm), oles mentega, panaskan oven dengan suhu 200C.
- Kocok telur dan gula sampah setengah mengembang, masukkan campuran terigu dengan coklat bubuk secara bertahap, aduk rata dengan spatula.
- Masukkan campuran mentega dan coklat cair kedalam adonan, aduk rata.
- Tuang adonan diatas loyang yang sudah disiapkan terlebih dahulu, ratakan, taburi dengan irisan kacang almond.
- Oven sampai 15menit atau sampai matang, Keluarkan daro loyang, potong2 kotak, tata kembali diatas loyang tipis.
- Oven kembali dengan suhu 120C selama 30menit sampai kering. Dinginkan, simpan dalam wadah tertutup.
Putri Salju Mente
Buat kue putri salju ini juga lumayan mudah ko' soalnya semua bahan masuk ke food processor tuh hehehe, Curang ga seh????/////
Bahan:
- 225gr salted butter
- 20 gr gula halus
- 300gr tepung terigu
- 75 gr kacang mente - panggang & cincang halus ( kalo versi saya lain dikit)
- Gula halus untuk taburan - secukupnya
Cara membuat:
- Resep asli: Campur gula, tepung dan mentega, cabik2 dengan pisau pastry sambil bentuknya berbutir2 kayak pasir (kalo males mixer bentar dengan speed rendah) kemudian padatkan adonan. Versi saya: Kacang mente yang sudah dipanggang, masukkan kedalam food processor, blender halus. Tambahkan mentega, gula dan tepung kedalam FP yang berisi blenderan kacang mente, lanjutkan resep aslinya.
- Bentuk sesuai selera, kalo saya pake kukis cutter biar ok hasilnya.
- Panggang di suhu 150-160C sampai matang.
- Keluarkan dari oven, biarkan agak dingin, setelah itu langsung baluri dengan gula halus.
Kue Kacang
Waktu browsing kue, saya liat kue kacang ini, kayanya mudah deh buatnya. Saya coba ikutin resepnya.
Bahan:
- 250 gr kacang tanah kupas, panggang
- 250 gr tepung terigu
- 185 gr gula halus (kalo menurut saya, ini kemanisan so bisa dikurangin if you like)
- 150 ml minyak goreng
- a pinch of salt
Cara Membuat:
- Blender kacang dan gula halus sampai kacang menjadi halus.
- Tambahkan minyak goreng kedalam campuran kacang tanah dan gula, aduk rata sampai menyerupai pasta, kemudian tambahkan tepung terigu. Aduk rata.
- Cetak adonan sesuai selera.
- Panggang di suhu 160 C selama kurang lebih 30-35 menit atau sampai kering.
Kering Kentang Ikan Teri
Kalo mau nyimpen makanan ditoples dan awet, ini salah satunya. Bisa abis dimakan gitu, ga bisa berenti deh mulut kalo udah makan ini, ato bisa juga jadi temen nasi.
Bahan:
- 500 gr kentang, kupas, potong korek api, rendam dalam air, cuci bersih, lalu goreng kering. Angkat Sisihkan.
- 100 gr teri, goreng kering.
- air jeruk nipis / air asem
- daun jeruk, iris tipis
- serai
- 3 sdm minyak
Bumbu Halus:
- 10 buah cabe merah
- 6 buah bawang merah ( saya pakek 1/4 bawang merah besar)
- 3 siung bawang putih
- 1/2 sdt garam
- 1 sdt gula pasir
Cara Membuat:
- Panaskan minyak, tumis bumbu halus, tambahkan air jeruk nipis, daun jeruk dan serai hingga harum, aduk rata sampai jadi karamel.
- Masukkan teri dan kentang goreng, aduk rata. Angkat, sisihkan.
- Masukkan kering kentang teri dalam toples.

Mpek Mpek...1st attempt!!!
Saya suka banget yang namanya Mpek Mpek, mau yang abang-abang pinggir jalan ato yang punya warung mpek mpek sekalian, pasti saya jabanin makan...
Ini resep mpek mpek yang saya buat, rasanya tetep enak, tapi kayanya masih kebanyakan tepung tapiokanya, so nanti saya mau cari resep mpek mpek sampe dapet yang paling oke....
Bahan Biang:
- 50 gr tepung terigu
- 500 ml air
- 3 siung bawang putih, haluskan
Bahan Adonan:
- 500 gr daging ikan tenggiri, haluskan
- 700 gr tepung tapioka
- 1 sdt garam
- 1/4 sdt gula
- 1/4 penyedap ( saya skipped)
Cara Membuat:
- Rebus bahan biang sambil diaduk hingge meletup-letup, angkat, dinginkan.
- Aduk daging ikan, garam, gula dan penyedap, tambahkan biang, aduk rata, masukkan tepung tapioka sedikit-sedikit sambil diaduk rata.
- Pulung 40 gr adonan hingga memanjang, rebus dalam air mendidih hingga terapung, angkat, dinginkan.
- Taburi mpek mpek yang sudah matang dengan tepung tapioka, masukkan kedalam plastik, dan simpan di freezer. Mpek mpek siap dimakan kapan saja.
- Goreng mpek mpek hingga berkulit, potong-potong, sajikan dengan mie, ketimun, cuko dan taburan ebi.
Untuk 20 buah
Nah ini hasilnya, baru inget harus difoto dulu ya, so hasilnya berantakan dwehhhhh
Resep Cuko ( Kuah Mpek-Mpek)
Bahan (untuk 500ml):
- 50 gr asam jawa
- 150 gr gula merah, iris halus
- 650ml air
Bumbu Halus:
- 20 buah cabe rawit
- 2 sdm tongcai ( saya skipped)
- 4 siung bawang putih
- 2 sdm ebi, rendam air panas hingga lunak, tiriskan, haluskan
Cara Membuat:
Didihkan asam jawa, gula merah dan air diatas api sedang. Setelah gula larut, angkat, saring.
Didihkan lagi, masukkan bumbu halus, masak hingga tidak bau langu, angkat.
Simpan dalam lemari es. Gunakan keesokan harinya, agar cita rasanya lebih mantap.
Bakso.....2nd attempt!!!!
Ini kali kedua saya buat pentol bakso. Saya pastikan semua bahan ready and ga ada satupun yang tertinggal. Cuman resep bakso yang kedua ini, saya pakek 1 kilo daging sapi.
Resep baksonya masih sama kaya yang pertama kali saya buat. Begini neh resepnya lebih jelasnya...
Bahan:
- 1 kg daging sapi, potong2 kecil
- 500 gr daging ayam, potong2 kecil
- 500 gr tepung tapioka
- 2 siung bawang putih
- 2 sdm bawang goreng
- 1 putih telur
- 1 sdt baking powder
- garam secukupnya
- merica secukupnya
- gula secukupnya
- air secukupnya
Cara Membuat:
- Masukkan daging sapi and ayam beserta putih telur, bawang putih dan goreng bawang ke dalam food processor. Mincing sampai halus.
- Transfer adonan bakso ke dalam bowl besar, tambahkan tepung tapioka sedikit demi sedikit sambil uleni adonan bakso. Beri air secukupnya sampai adonan siap dibentuk. Jangan lupa tambahkan baking powder, garam, merica dan gula.
- Siapkan air didalam panci, pastikan cukup panas airnya. bentuk adonan bakso, lalu scoop dengan sendok teh, celupkan ke dalam panci. Jikalau mengapung, berarti bakso matang dan siap diangkat. Tiriskan.
- Masukkan pentol baksonya kedalam plastik zip lock, dan simpan ke dalam freezer ato buat bakso sekalian.
So sekarang ga usah refottt kalo perut udah laper, kita bisa masak serba cepat and ready. Soalnya persediaan baksonya ok tuh di fridge!!!! Mau masak apa mie instant pakek bakso plus cabe rawit, ato masak mie goreng pakek bakso ato mungkin capcay???
Nah kalo yang ini neh, bakso kuah buatan saya
Udah cemplungin toge ma daun sawi ijo, kasih sambel bakso juga kecap, pas mau masuk ke mulut baru inget, kan harus dipoto dulu yah....liat aza deh tuh sendoknya ikut juga dipoto, abis udah ga sabar yah, droolingggggg.
Buat kuah bakso, lumayan gampang ko, ulek bawang merah, bawang putih juga merica. Kasih garam ma penyedap makanan. Tapi kalo mau lebih sedap lagi kasih tulang deh, biah kuah baksonya lebih kerasa.
Udah dulu yah, yuk mari makan.....

Bisanya makan doang and tukang ngabisin hehehehe. Dulu ampe saya bela-belain maen ke city cuman pengen makan indonesian food doang. Makan siang di Nelayan Restaurant Cuisine trus pulang sekalian ma suami.

- gula secukupnya
- baking powder dikit aza ( saya lupa kasih)
- air secukupnya
- Semua bahan masukkan ke dalam food processor, kecuali tepung tapioka dan air. Mincing sampai halus.
- Transfer adonan bakso ke dalam bowl besar, tambahkan tepung tapioka secara bertahap, and aduk rata pake tangan. Beri air sedikit sampai adonan siap dibentuk.
- Panaskan panci besar yang sudah ditaruh air.
- Kepal2 adonan di tangan kiri sampai bentuk pentol and scoop dengan teaspoon dengan tangan kanan.
- Masukkan ke dalam panci, jikalau mengapung artinya bakso matang dan siap ditiriskan. Dinginkan.
- Taruh pentol bakso ke dalam zip lock plastick, masukkan ke dalam freezer. Bakso siap dimakan ato dimasak kapan aza.

Ethan's 1st Birthday Menu Plan
One month before Ethan's 1st Birthday, i was starting to look, read, browse about menus what i have to cook on his 1st year. Yes, we celebrated his 1st Birthday.
He was born on 19 July 2010, i already fallen in love with him since he was in my tummy. But my love to him become more and more once i saw him for the very 1st time. When the doctor put him on my chest 1 year ago in Werribee Mercy Hospital. My eyes can't believed that he is my baby, my son who stayed, lived, kicked and so on for 9months inside my tummy. I can see him now, we had a few scanned pictures when we did ultrasound. But we never figured him out how his look like once he born. This is his picture we took on his 1st day in the world, my baby, my pumpkin, my ade, my sunshine, my love, my everything in this world...same with my Cinta, my husband.
That milestone time is really fast, so fast. We are so happy to have him, and make our life completed as a family.
Lets go back to my post about menu plan that i planned.

So i wrote it down, yellow rice with friends as a main dish. Then i have to think about appetizers, desserts, as well with soup if possible. We were planning for BBQ-ing too. We will have a big party for our lil boy.

Mexican Chicken & Rice
Do you like Mexican food? I do really like it because HOT...HOT...HOT, but my hubby is not fans of Hot spicy stuffs, it will make him cry wkwkwkwk
So when it come to cook spicy food always make it a bit not too much, otherwise he won't eat. He will prefer eat his cereal than my cooks :-(
Ingredients:
- 1 tbs vegetable or olive oil
- 1 tbs finely grated orange zest
- 1/3 cup freshly squeezed orange juice
- 1 tbs mexican mild chilli powder
- 8 chicken drumsticks
- 3/4 cup long grain white rice ( i used jasmine rice)
- 100 gr green beans, trimmed, chopped
- 300 gr can corn kernels, rinsed
- 400 gr can red kidney beans, rinsed
- 1/2 cup coriander leaves, chopped
- 1 fresh long red chilli, seeded, thinly sliced ( i only used half)
- lime wedges, to serve ( i used lemon wedges)
- Preheat oven to 200 degrees C or 180 degrees C fan forced. Combine oil, zest, juice, chilli powder in a medium bowl. Add chicken, toss to coat. Place chicken on baking tray lined with baking paper. Bake for 35 minutes or until cooked.
- Meanwhile, cook rice in plenty of boiling salted water for 12-14 minutes, adding green beans in the last 3 minutes. Drain. ( because i used jasmine rice, i cooked in rice cooker with small amount of water)
- Place rice mixture in a medium bowl. Add corn, kidney beans, coriander and chilli. Stir to combine. Serve rice with chicken and lime wedges ( mine is lemon).
- To save time, use 2x250 gr packets 90 seconds microwave rice.
- For quick Mexican style chicken, dust chicken with a little flour with taco seasoning.
Whipped Cream
1 cup (240ml) heavy whipping cream
1/2 tsp vanilla extract
1 tsp (15gr) white sugar
In a large bowl mixing bowl, place the whipping cream, vanilla extract and sugar and stir to combine. Beat the mixture until stiff peaks form. Spread frosting on each cupcake with a knife or a spatula.

Lamb Shanks In Red Wine Sauce
I loved lamb, usually we ate grilled lamp chops. But i want to change that menu to something new.
So i bought this lamb shanks, only 2 pieces, because we only 2 person at home, me and my husband. And Ethan has his own meal.
I am not red wine person or any other drinks, coz i just can't drink it. Make me dizzy hehehehe
So simple to cook it, i just put all in my slow cooker, and stirring for sometime.
Ingredients:
- 1 medium large onion, chopped (original used 1 large onion)
- 150 gr button mushroom, sliced ( i used half can of mushroom)
- 2 cups red wine ( i only used 1 cup, coz i can imagine myself while eat this food ^-^)
- 1 cup chicken stock
- 1/4 tomato paste
- 4 trimmed lamb shank ( i only used 2 lamb shank)
- potato, peel, and cut into medium size ( no potato in original recipe )
- carrot, peel and cut into medium size ( no carrot in original recipe)
Method:
- Heat the pan, and fry lamb shanks until browned.
- Switch on your slow cooker, put lamb shank in there and all the ingredients. I set up my slow cooker on high, cook for 3-4 hours, stirring for sometime, and don't forget season with salt and pepper.
- Serve with rice
Method in Original Recipe:
- Saute onion in a heated lightly oiled, large frypan until just softened. Add mushrooms and saute for a further minute. Stir in the wine, stock and tomato paste and bring to the boil.
- Place lamb shank in a large casserole dish and pour the hot wine mixture over them. Cover dish with lid and bake in 180 degrees C preheated oven for 1 1/2 hours turning the shanks halfway during cooking time.
- Remove shanks from wine sauce, cover and keep warm. Pour wine sauce into saucepan and simmer uncovered for 10 minutes or until reduced and thickened slightly. Serve lamb shanks and red wine sauce with mashed potato.
Salmon Pie
We are so often to eat fish, we are rather to choose beef, lamb or chicken. Once i brain stormed, lets put fish in our menu weekly plan...
I looked up this magazine, and look good from the picture. And i want to share my experience with this food.... my hubby liked it, and had more....he is a big boy hehehehe
Ingredients:
- 3 tasmanian skinless salmon portions (about 500gr)
- 1 tbs olive oil
- 1 onion, finely chopped
- 100 gr mushrooms, sliced ( i used can mushroom)
- 1/2 cup long grain rice, cooked, cooled
- 1 tbs choppped fresh dill
- 2 tbs thin cream ( i used light cream)
- 3 hard boiled eggs, chopped
- 4 sheets frozen puff pastry, thawed
- 1 extra egg, beaten for egg wash
- Preheat oven to 200 degrees C or 180 degrees C fan forced. Wrap salmon in non stick baking paper and place onto oven tray. Bake for 10 minutes, until just cooked. Unwrap and cool (leave the oven on).
- Heat oil in frying pan. Fry onion on medium heat for 5 minutes, until soft. Add mushroom and cook a further 2 minutes, until soft. Transfer the mixture to a large bowl, cool slightly. Stir in the rice, dill, cream and eggs. Season with salt and pepper.
- Lay 2 sheets of puff pastry together, overlapping by about 6cm, on a large sheet of non stick baking paper. Spread the rice mixture into a pile along the pastry, about 5cm in from the sides. Break the salmon into chunks, and place along the top of the rice.
- Overlap the 2 remaining sheet of pastry the same way, and place over top of filling. Press pastry around edge of filling, trim any excess pastry. Use a teaspoon to press pastry edges together decoratively, brush with egg. Using the paper, lift pie onto a large oven tray. Bake for 45-50 minutes, until golden brown. Serve with salad.
Samosa
Basicly my Samosa is potato, nothing else. The other i made something, and i still have left filo sheets in the fridge.
This recipe, i took from Recipes+ Magazine.
Ingredients:
- 2 medium potatoes, peeled, cut into 1cm pieces. ( I used 3 potatoes)
- 2 tsp vegetable oil
- 1 medium brown onion, finely chopped
- 2 cloves garlic, crushed
- 1 tsp mild curry powder
- 1 cup frozen peas ( i don't have it, so i added more in potatoes)
- 2 tbs chopped coriander
- 1/3 cup low-fat cottage cheese
- 12 sheets filo pastry
- cooking oil spray
- 1 tsp poppy seeds ( I skipped it)
Method:
- Preheat oven to 180 degrees C or 160 degrees C fan forced. Line 2 baking trays with baking paper. Place potato in a large saucepan; cover with cold water. Bring to the boil, for about 5 minutes or until just tender. Drain.
- Heat oil in a large frying pan over moderate heat. Add onion; cook and stir for 5 minutes or until soft. Add garlic and curry powder; cook and stir for 1 minute or until fragrant. Add potato; cook and stir for 2-3 minutes or until starting to brown. Add peas, coriander and freshly ground black pepper; cook and stir for 1 minute. Transfer mixture slightly, then stir in cottage cheese.
- Place a sheet of filo on flat surface. Spray with oil. Top with another sheet of filo. Cut in half lengthwise. Repeat to make 12 strips of filo. For each samosa, spoon 1/4 cup potato mixture at one end of pastry strip; fold and roll to enclose, shaping into a triangle. Place on prepared tray. Spray with oil; sprinkle with poppy seeds. Bake, swapping trays after 15 minutes, for 25 minutes or until golden.
Lamb Pita Pockets
If you want to cook simple and fast, i think this is will be one of the option. I found this recipe from one of magazine at home.
To cook this, you will need:
Ingredients:
- 1 tbs vegetable oil or olive oil
- 400gr lamb mince or beef mince
- 1 large brown onion, thinly sliced
- 2 cloves garlic, crushed
- 1 fresh large red chilli, seeded, thinly sliced ( i used only half, consider my hubby doesn't like hot)
- 1 tbs ground coriander
- 1 tbs ground cumin
- 2 tbs pine nuts, toasted ( for budget tip, you can use omit nuts)
- 100 gr baby spinach leaves
- 4 pita pocket, split to make a pocket ( for budget tip, you can change it with lebanese bread)
- 1 lebanese cucumber, peeled, finely chopped
- 1 cup natural yogurt
- 1/4 chopped coriander
Method:
- Heat half the oil in a medium frying pan over mederate heate. Cook mince, stirring to break up lumps, for 4-5 minutes or until browned. transfer to a heat proof bowl.
- Add remaining oil to pan. Cook and stir onion and garlic for 3-4 minutes or until onion softens. Add chilli and spices, cook for 1 minute more or until fragrant, return mince to pan with pine nuts and spinach. Stir for 1-2 minutes.
- Fill pita pockets with mince mixture. Put cucumber, yogurt and sprinkle with fresh chopped coriander.
Serve 4 persons
Pumpkin Soup (Mother In Law Recipe....Mama Mary)
Once i pregnant for Ethan, i was craving for this pumpkin soup, my mom in law used to make this soup and always become hit in any occasion, and eat with her homemade pumpkin bread. Yummmmmm
1 soup bowl is not always enough, its just my mom in law give "a spell" in it hehehehe kidding mom!!!!
So finally Mama, gave me her ultimate pumpkin soup recipe. It been long time sitted in my files of recipe.
I think we dont have to go to Anakie, if i want to eat her pumpkin soup, but i still have to go there to ask mom homemade pumpkin bread lalalalala.....
Ingredients:
- Asia yellow curry paste ( you can find it in Aldi)
- ground coriander
- ground turmeric
- salt
- ground black pepper
- finely chopped brown onion
all these ingredients, saute in a little oil.
- diced pumpkin (prefered kent pumpkin)
- diced sweet potato
- carrots, chopped
- parsnip, chopped
- potatoes
- chicken stock
boil vegetables in pot until cooked.
- add evaporated milk or coconut milk, stir til combine.
Blend with stick blender.
Serve once still hot with chopped fresh parsley or coriander
This pumpkin soup recipe, i was using my sense of feeling how much and how many ingredients and vegetables put in a pot. But still end up like Mom Maree's recipe. Nom nom nom....

Vanilla Butter Cream
Ingredients:

Greek Style Pie
When I woke up in the morning, I saw Ethan next to me in our bed who's already babbling n kissing me all over my face. I still feel sleepy and my eyes still closed. I gave him my mobile to play with, and accidentally he hit call button and i heard someone there said "Yes Cinta"... Oh No!!! he called his daddy, Smarty Boy!!!!
He missed his daddy already, made me smile for what he did.
Well actually i still want to continue my sleep bcoz yesterday night i couldn't sleep. I didn't know why???? I know i like to sleep late but not like that since i have Ethan. I followed my hubby bed time around 10pm, we already in the bed.
"No Way, get up Wida!!!! its already 8am now, and U have to give Ethan his breakfast!!!" My mind said....
And yeah I went to the kitchen, fed him his breakfast "Cereal with Homemade Apple Sauce". After finish gave him breakfast, I put him down from his high chair, to let him to walk around and make home messy.
I ate my breakfast, and i checked outside sky was clear and sunny too, not bad day so maybe we go out for a walk to nearest supermarket Coles to buy a Fillo Pastry for dinner later.
And here we go my Fillo Pastry became Greek Style Pie...
To make this Pie, you will need:
Ingredients:
- 6 sheets frozen Fillo Pastry, thawed
- 100gr sun dried tomatoes oil, finely sliced, oil reserved
- 120gr packet baby spinach leaves
- 200gr low fat fetta cheese, crumbled
- 2 eggs, lightly beaten
- cooking spray
- salt
- pepper
Method:
- Preheat oven to 200 degrees C (180 degrees Fan Forced) & lightly greased base and sides of loaf pan with cooking oil spray. Brush a sheet a fillo with reserved oil and repeat with remaining fillo sheets, put in loaf pan. Set aside.
- In a bowl, combine tomatoes, spinach, fetta cheese and eggs. Season well and mix to combine. Spoon filling into fillo case. Pull aside into middle, scrunching up to enclosed filling. Brush with a little more reserved oil.
- Bake 25 minutes until pastry is crisp and golden. Remove from pan and slice pie evenly. Serve with Greek salad.
Dinner ready Dad!!! and he ate more slices, he likes it.....HOORREYYYYY
Chicken Mushroom Pie
The other day, i went to Coles, and grab this Winter Magazine 2011, and I saw this Chicken Mushroom Pie as a cover, look so yummy and De-Lishhhhh......
I read it at home, what ingredients i need and how to make it. Its simple ingredients and easy to cook too.
So i said to myself, i think i can make this pie and give it a go in the kitchen.
And YES, thats my Pie, as a first time to make, not to bad lah, and taste soooo Good, I think i can finish it all the whole pan hehehehe without share to my husband.
The Ingredients:
- 2 tsp olive oil ( i used vegetable oil)
- 700gr chicken tight fillets, chopped
- 1 leek, finely sliced
- 100gr cup mushroom, sliced ( i used 200gr)
- 30gr butter ( i used margarine)
- 1 tbsp plain flour
- 1 cup milk
- 4 sheets frozen shortcrust pastry, thawed
- 1 egg, lightly beaten
- 1 1/2 tsp sesame seeds
- salt
- pepper
Method:
- Heat oil in a large non-stick frying pan and cook chicken in over medium-high heat until well browned and cooked through. Set aside in a bowl.
- Reduce heat to medium and add leek to the pan, cook for 2 minutes, or until leek is soft. Add mushrooms and cook for further 3-4 minutes or until soft. Add chicken. Melt butter in same pan, and sprinkle flour over. Cook, stirring, for 1 minute. Add milk a little a time, stirring until smooth and well-combined between each addition. Season with salt and pepper to taste, and cool completely.
- Preheat oven to 190 degrees C (170 degrees C fan forced). Cut a 16cm and 12cm round from each pastry sheet (they will overlap slightly, but you can pacth the missing pieace with a bit of leftover pastry). Line pie pan dishes with the larger pastry rounds.
- Fill pie shells with chicken mixture, then lay a smaller pastry round on top. Press edges to seal. Brush with egg, and sprinkle with sesame seeds. Use a fork to prick a few holes in top of the pies. Bake for 25 minutes, or until golden brown.
I ate these pie with my ABC extra hot chilli sauce ( Saos ABC sambal extra pedas) ... make it perfect in my mouth....
Try this, and you won't regret!!!!
Satay Beef Stir-Fry with Rice
Become a house wife is not easy job tho!!! i though it was eezyyy peezyyy because i watched my mom to do her role as a wife to my dad, as a mother to 3 of us...(i have 1 lil sis and 1 lil bro)... and as well as a teacher to her students at primary school. Also she had to prepare and cook for us. Its look like so managable with everthing that she has to do everyday. I give her SUPER DUPER thumds up for what she did for us.
And for me, just to make everyday menu is really make me dizzy eventhough my hubby has rule, "his rule" is one day cook and the next day is off, NICE isn't???? but sometimes i didnt obey it...coz nothing to do, just looking out for my baby boy, watching tv and do some households. I can't drive, still with my L plate, so stuck mostly at home.... :-(
To search for a new idea what i have to cook, its really took time for me. So end up with this menu on the plate for our dinner.
Ingredients:
- 500gr beef strips
- 270ml coconut milk ( i dont have it so i used heavy whipping cream)
- 1/2cup crunchy peanut butter
- 1/2cup sweet chilli sauce
- 1 brown onion, sliced
- 2cups halved snow peas ( i dont have it, i used sliced carrots)
- 1/3cup water
- 2 tbs oil
- 1 red capsicum
Method:
- Place coconut milk (cream), peanut butter, chilli sauce and water into a small saucepan and heat over low heat. Stirring until smooth and slightly thicked. Removed from heat.
- Heat the oil in wok over high heat. Add onion, capsicum and carrot, stir fry for 2-3 minutes or until golden browned. Removed from wok. Cook beef for 3-4minutes pr until turning browned. Return beef, onion and satay sauce. Cook for a futher 1 minute or until combined.
- Add snow peas and cook, stirring for 2 minutes ot until just tender. Serve beef in a a bowl or plate with rice...
Walahhhh dinner is ready....

Ingredients:
- 200 g/ 7 oz plain chocolate, chopped
- 115 g/ 4oz/ 1/2 cup butter, diced
- 150 ml/ 1/4pintl/ 2/3 cup water
- 275 g/ 10 oz/ 1 1/3 cup granulated sugar
- 10 ml/ 2 tsp vanilla essence
- 2 size 3 eggs, separated
- 175 ml/ 6 fl oz/ 1/4 cup soured cream
- 350 g/ 12 oz/ 3 cups plain flour
- 10 ml/ 2 tsp baking powder
- 5 ml/ 1 tsp bicarbonate of soda
Chocolate Cupcake
I made this cupcake for friend of me and Paul, my husband who just moved to their new house in Bannockbarn, Melissa and Damien Graham. A sweet couple who just married about in November 2010.
Its really difficult now to move around and cook in the kitchen with Ethan likes to walk around and need my attention, such a spoil boy, a MOMMY BOY...
So I decided to make this cupcake for them as dessert...
Dont look how my buttercream frosting so not appealing to see, but please taste it and you will ask for more for sure....
This recipe is for cake, but i made it for cupcake.
And here the ingredients:
- 125gr butter
- 100gr dark chocolate
- 155ml water
- 12gr cocoa powder
- 1/2 tsp instant coffee granules
- 168gr caster sugar
- 1/2 tsp vanilla extract
- 1 large egg
- 125gr self raising flour
Method:
- Preheat the oven to 160 degrees C (140 degrees C Fan-Forced)
- Line the muffin pan with 12 cupcake cases.
- Place butter, chocolate, water, cocoa, coffee and sugar in a large saucepan over low heat. Stir occasionally and remove from heat when chocolate and butter have just melted. Transfer mixture to a large bowl mixer and set aside to cool for about 15 minutes.
- Add vanilla and egg to chocolate mixture. Using stand mixer, beat until combined. Add flour and beat for about one minute, until mixture is smooth.
- Pour mixture to muffin pan evenly.
- Bake for 20-25 minutes. check with skewer or toothpick to the centre of cupcake, when comes out clean, means cupcake is ready.
- Cool cupcake on a wire rack. when cooled, spread it with Vanilla Butter Cream.

Lemon Cupcake
This is a recipe continue from previous post. This recipe willl make 12 cupcakes so i double up all the ingredients. But in this post i will only write for original recipe which is only 12 cupcakes.
Ingredients:
- 1/2 cup (113gr) unsalted butter, at room temperature
- 2/3 cup (130gr) white sugar
- 3 large eggs
- 1 tsp vanilla extract
- zest of 1 large lemon (outer yellow skin)
- 1 1/2 cup (195gr) all purpose flour ( i used plain flour)
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup (60ml) milk
Method:
- Preheat oven to 350 degrees F (177 degrees C) i turned my oven to 180 degress C and line 12 muffin pan with paper cup lines.
- In the bowl of electric mixer, or with a hand mixer, beat butter and sugar until light and fluffy.
- Add the eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl as needed. Beat in the vanilla extract and lemon zest.
- In a separate bowl, whish together the flour, baking powder, and salt.
- Set the mixer on low speed, alternately add the flour mixture and milk, in 3 addition, beginning and ending with the flour. Scrape down the sides of the bowl as needed.
- Fill the muffin cup with batter, bake for about 20 minutes or until nicely browned and a toothpick inserted into a cupcake comes out clean.
- Remove from the oven and place on a wire rack to cool. Once the cupcakes have cooled completely, cut a deep hole in the center of each cupcake, using a lemon baller. Fill each hole with a heaping teaspoon of lemon curd.
After that, you can spread these lemon cupcake with whipped cream.
So in that day i made these cupcake with my fried rice, i brought in a cupcake case, and also bring my cupcake tier rack.
My other Sis in law, Kelly said this is the best cupcake that she ever had...wink wink wink...aku maluuuu.
Everyone took some this cupcake home. And you know what my Uncle Trevor was asking me about my spring roll, i told him that Nikky didn't ask me to make, so i don't then....uhhh poor Uncle Trevor, next time ya i'll cook. I think i already introduced well my "Bule" family to my homemade cooks, and so far they always gave me compliments...
Lemon Curd
I really like taste of lemon, it makes me feel fresh and "wake up". I had a lot of lemons the other days, my 2 neighbours gave it to us. I already made lemon juice, added lemons to my cooks but still i have few.
So i browsed the internet what can i make with that lemons??? , no ideas. But I kept it in mind that soon is My Hubby's birthday and he didn't want anything from me...so i was thinking just make him this lemon cupcake.And to make that cupcake i need to make this first. As well my Sis In Law, Nikki will going away to Ireland for 3months. And she asked me to make cake and fried rice for her farewell lunch before she leave. So why not then...
I clicked this website and try this recipe at home.
You will need...
Ingredients:
- 3 large eggs
- 3/4 cup (150gr) white sugar
- 1/3 cup (80ml) fresh lemon juice...you will used 2-3 lemons, do not use the bottled lemon juice!!!!
- 4 tbs (56gr) unsalted butter, cut into small dices at room temperature
- 1 tbs (4gr) finely shredded lemon zest
Note :
Room temperature lemons will provide more juice after squeezing, strain the juice to remove any pulp.
Zest is the yellow, sweet flavored outer rind of lemon. A zester or fine grater can be used to remove the rind. Cold lemons are much easier to grate. Grate lemons just before using as the zest will lose moisture if it sits too long.
Methods:
- In a stainless steel bowl, place over a saucepan of simmering water ( tehy called it double boiler). Whisk together the eggs, sugar, and lemon juice until blended cook.
- Stirring constantly ( to prevent it from curdling), until mixture become thick (like sour cream) around 160 degrees F or 71 degrees C (i don't have this tool a cook temperature to tell me exactly so i just used my feeling to tell me once it formed like sour cream). This will take approximately 10 minutes.
- Remove from the heat immediatelly, pour through a fine stainer to remove any lumps.
- Add butter and lemon zest, and let it cool. The lemon curd will continue to thicken as it cools.
- Cover immediatelly ( so no skin will form) and refrigerate up to a week.
Make 1 1/2 cups (360ml)
Note:
If you want a lighter lemon curd, whip 1/2 cup (120ml) of heavy whipping cream and fold into the lemon curd.
White Sauce
It so easy pezzy to make this sauce, i think everybody will find no difficulty.
Melt 80 gr margarine in a pan and add 1/2 cup plain flour. Mix Well. Whisk in 2 cups milk and stir over medium heat until mixture simmers and thickens. Cool slightly before using.

Pasta Bake with Creamy Topping
This was our dinner last Friday, its similiar with lasagna, but instead lasagna pasta, i used rigatoni pasta.
The ingredients are:
- 500 gr minced beef
- 400 gr passata (tomato pasta sauce in bottled)
- 1/4 tsp ground cinnamon
- a pinch nutmeg
- 400 gr rigatoni pasta, cooked, and drained
- 3 cups baby spinach leaves ( i used 1 pack 120 gr baby spinach leaves)
- 1 cup grated tasty cheese
- 1 tbs oil
- 1 cup water / beef stock
- salt
- pepper
- 1 quantity white sauce
Method:
- Heat a large pan and add oil, add mince and cook until well browned. Add sauce, water/beef stock, and spices. season with salt and pepper. Cover and simmer for 30 minutes, stirring often. Allow to cool.
- Add rigatoni and spinach and divide into two batches, Top each with half the white sauce and cheese. Freeze now or bake at 180 degress Celcius (160 degress C fan forced) for 20-25 minutes. Serve with salad.
This pasta was saved our tummy in that night. Bon A Petit.......
