Samosa


Basicly my Samosa is potato, nothing else. The other i made something, and i still have left filo sheets in the fridge.
This recipe, i took from Recipes+ Magazine.

Ingredients:
  • 2 medium potatoes, peeled, cut into 1cm pieces. ( I used 3 potatoes)
  • 2 tsp vegetable oil
  • 1 medium brown onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 tsp mild curry powder
  • 1 cup frozen peas ( i don't have it, so i added more in potatoes)
  • 2 tbs chopped coriander
  • 1/3 cup low-fat cottage cheese
  • 12 sheets filo pastry
  • cooking oil spray
  • 1 tsp poppy seeds ( I skipped it)
Method:
  1. Preheat oven to 180 degrees C or 160 degrees C fan forced. Line 2 baking trays with baking paper. Place potato in a large saucepan; cover with cold water. Bring to the boil, for about 5 minutes or until just tender. Drain.
  2. Heat oil in a large frying pan over moderate heat. Add onion; cook and stir for 5 minutes or until soft. Add garlic and curry powder; cook and stir for 1 minute or until fragrant. Add potato; cook and stir for 2-3 minutes or until starting to brown. Add peas, coriander and freshly ground black pepper; cook and stir for 1 minute. Transfer mixture slightly, then stir in cottage cheese.
  3. Place a sheet of filo on flat surface. Spray with oil. Top with another sheet of filo. Cut in half lengthwise. Repeat to make 12 strips of filo. For each samosa, spoon 1/4 cup potato mixture at one end of pastry strip; fold and roll to enclose, shaping into a triangle. Place on prepared tray. Spray with oil; sprinkle with poppy seeds. Bake, swapping trays after 15 minutes, for 25 minutes or until golden.
