To cook this, you will need:

  • 1 tbs ground cumin
  • 2 tbs pine nuts, toasted ( for budget tip, you can use omit nuts)

Method:
  1. Heat half the oil in a medium frying pan over mederate heate. Cook mince, stirring to break up lumps, for 4-5 minutes or until browned. transfer to a heat proof bowl.
  2. Add remaining oil to pan. Cook and stir onion and garlic for 3-4 minutes or until onion softens. Add chilli and spices, cook for 1 minute more or until fragrant, return mince to pan with pine nuts and spinach. Stir for 1-2 minutes.
  3. Fill pita pockets with mince mixture. Put cucumber, yogurt and sprinkle with fresh chopped coriander.
